Retha’s Gluten-Free Chocolate Chip Banana Muffins
Recipe makes 15 servings
2 1/2 cups Pamela’s Baking Mix
3/4 cup semi-sweet chocolate chips
1/2 cup water
3 ripen mashed bananas
2/3 cup agave syrup
2 large eggs
1 tsp vanilla
Preheat oven to 350
Mix baking mix and chocolate chips in medium bowl.
In separate large measuring cup, mix well the water, mashed bananas, agave syrup, eggs and vanilla. Add egg mixture to baking mix and chocolate chips, mixing to just combine.
Line and spray muffin tins.
Fill 2/3 full with batter and bake for 20 minutes, until toothpick inserted comes out clean (cooking time varies for different ovens).
