RETHA’S BANANA NUT BREAD

Retha’s Banana Nut Bread is a delicious moist bread where you can make a number of variations with the recipe depending on your taste for spices and nuts.

INGREDIENTS:

1 cup mashed ripe bananas (approximately three medium bananas)
2 large organic eggs, beaten
1/4 cup coconut oil
1 cup brown rice flour
1/2 cup tapioca starch
3/4 cup stevia
1/2 cup unsweetened applesauce
1 tablespoon rice bran
2 teaspoons baking powder
3/4 teaspoon xanthan gum
1/2 teaspoon baking soda
1/2 teaspoon sea salt
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 cup walnut pieces

DIRECTIONS:

Preheat oven to 350 degrees. Lightly grease a 9-inch loaf pan.

In a mixing bowl, beat the mashed bananas with the eggs and oil until combined. Add the brown rice flour, tapioca starch, stevia, applesauce, rice bran, baking powder, xanthan gum, baking soda, salt, vanilla and cinnamon and beat until a smooth sticky batter forms. Stir in the walnut pieces by hand.

Scoop the batter into the loaf pan and spread evenly. Sprinkle the top with some extra walnut pieces, if desired. Bake on the center rack for 55 to 65 minutes, if necessary, until the center is done (a toothpick should emerge clean). Ovens vary, so check the loaf at 50-60 minutes.

Let cool in pan on wire rack for about 10 minutes. Then remove from pan and allow bread to completely cool for about an hour.
