Retha’s Loaded Baked Potato

The potato is flavorful both from the outside to the inside. You can also add other toppings that your family may enjoy.

INGREDIENTS:
Recipe Makes 4 Servings

4 large baking potatoes, scrubbed

2 tablespoons coconut oil

2 teaspoons garlic salt, or to taste

4 tablespoons low-fat cheddar cheese

1/4 cup green onions, chopped

2 turkey-bacon slices, cooked then crumbled

1/2 teaspoon sea salt

1/4 teaspoon lemon-pepper

DIRECTIONS:

1. Preheat the oven to 375 degrees F.
2. Pierce each potato skin with a fork. Pour coconut oil into a plastic bag. Measure the garlic salt and lemon-pepper onto a plate, and stir around a little. Coat each potato with coconut oil by placing in the bag, and moving it around. Remove from the bag, and dip into the seasoning. Rub seasoning onto the potato to coat. Place the potatoes directly on the oven rack.
3. Bake for 1 hour in the preheated oven, or until the potatoes feel soft when you squeeze them. Cut each potato in half lengthwise. Top with sprinkling sea salt, pepper, green onions, cheddar cheese, and turkey-bacon.
