Retha’s Spinach Frittata

Recipe makes 4 servings

2 tablespoons Coconut oil
1/2 cup chopped onion
4 eggs
1/2 cup Almond milk
¼ 1b spinach, rinsed, dried and torn or cut into 1-inch pieces
1 cup chopped cooked ground sausage or turkey
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper


1. Heat Coconut oil in a skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes.
2. Beat eggs and milk together in a bowl until smooth; add spinach, sausage, mozzarella cheese, cheddar cheese, sea salt, and black pepper. Gently stir to mix evenly; pour into the skillet.
3. Place a cover on the skillet and cook until the egg mixture is completely set in the center, 7 to 10 minutes. Cut into wedges to serve.
