Retha’s Grilled Chicken Fruit Salad
Recipe Makes 4 Servings
An excellent summer or dinner salad that can be changed to suit your liking. Other cheeses can be substituted such as feta and blue cheese.
INGREDIENTS:
12 ounces cooked, boneless grass-fed chicken breast, sliced
4 cups romaine lettuce
1 1/2 cups sliced fresh strawberries
1/3 cup dried cranberries
1 cup diced Golden Delicious apples
1/2 cup cashews
1/2 cup raspberry-lite vinaigrette salad dressing
1/4 cup shredded low fat cheddar cheese
DIRECTIONS:
1. In a large bowl, mix the romaine lettuce, strawberries, dried cranberries, dried apples, and cashews. Toss with the raspberry vinaigrette salad dressing to serve. Sprinkle cheese on top.
