RETHA’S KIELBASA-CABBAGE

Retha’s Kielbasa-cabbage and veggies is a delicious combo for this hearty one-pot meal. This would be good to serve on a cold winter’s night with cornbread.

INGREDIENTS:
Recipe makes 6 servings

2 1/2 pounds kielbasa

1/2 cup sliced baby portobello mushrooms

1 green bell pepper sliced

3 carrots, peeled and cut into small chunks

1 medium onion

1 large head cabbage, quartered

1 teaspoon sea salt, or to taste

1/2 teaspoon lemon pepper, or to taste

1 cup water OR low sodium chicken broth

DIRECTIONS:

1. In a large skillet place water or chicken broth over medium heat. Quarter cabbage and add to the skillet. Season with salt and pepper. Place sausage, onions, and mushrooms, and carrots on top. Then cover with a lid.
2. Bring to a boil, reduce heat, stirring periodically, and simmer for 30 minutes, or until vegetables are tender.

*Recipe Note: Other additions you may want to season with are garlic powder, basil leaves, and thyme.
